Description
A hiyaoroshi (autumn release) junmai ginjo from Shinshu Meijo's Takizawa label, matured through summer after a single spring pasteurization before shipping in autumn. The seasonal conditioning rounds off the edges of the sake, producing a mellow, apple-forward aroma with smooth rice umami, a gentle acidity, and a clean finish.
