Description

Shinshu Meijo brews in Ueda, Nagano, using some of Japan's softest water, a defining characteristic that shapes every sake the brewery makes. The Kanae Junmai Ginjo uses Miyamanishiki rice polished to 55%, and the soft water draws out a plush, gentle mouthfeel that few other regions can match. The nose offers apple and pear with a tropical edge of melon; the palate is gently sweet and fruity, with a subtle effervescent prickle typical of freshly pressed Nagano sake and a clean, lingering finish. Soft, approachable, and effortlessly harmonious from beginning to end.
