Description

Soukuu Tokubetsu Junmai Tankan Wataribune from Fujioka Shuzo in Fushimi, Kyoto, uses Tankan Wataribune, an heirloom Osaka rice variety revived in the 1990s that is a genetic ancestor of Yamada Nishiki, for a historically rooted pure rice expression. At this exclusively junmai brewery where fifth-generation owner-toji Masaaki Fujioka crafts every expression with Fushimi's celebrated soft water, this ancient rice delivers layered depth and a grounded, food-affine character.
