Soukuu Tokubetsu Junmai Omachi from Fujioka Shuzo in Fushimi, Kyoto, uses Omachi, one of Japan's oldest sake rice varieties revered for producing complex, earthy sake with deep umami, in the brewery's characteristically food-compatible pure rice style. At this exclusively junmai brewery revived in 2002 under fifth-generation owner-toji Masaaki Fujioka, Omachi's distinctive savory depth is shaped by Fushimi's famously soft, sweet water.
