Soukuu Junmai Miyama Nishiki Kasumi Sake (Hazy Sake) from Fujioka Shuzo in Fushimi, Kyoto, is a lightly filtered, softly cloudy expression of this exclusively junmai brewery's Miyama Nishiki character. The kasumi (mist/haze) style preserves fine lees in suspension for a softened, textured mouthfeel, shaped by the fifth-generation owner-toji's hands and Fushimi's renowned soft, sweet water at this brewery revived in 2002.
