Description
Soukuu (Blue Sky) Kura-dukuri Kome Kinu Hikari from Fujioka Shuzo in Fushimi, Kyoto, is brewed from Kinu Hikari rice cultivated by the brewery itself, a rare practice of vertical integration that gives this exclusively junmai producer direct control from rice field to bottle. Founded in 1902 and revived in 2002 under fifth-generation owner-toji Masaaki Fujioka, the brewery draws on Fushimi's famously soft, sweet water to craft sake that reaches both heaven and people's hearts, in the family motto's words.
