Shussejo Kassei Namazake is an actively fermenting, unpasteurized sake from Hamamatsu Shuzo in Shizuoka, where the yeast remains alive in the bottle and produces a mild natural carbonation. The kassei (active) and nama (unpasteurized) designations together indicate a sake at the most vivid, dynamic point of its life, commonly seasonal and refrigerated. The brewery, established in 1871 as Nakamura Brewery and later renamed Hamamatsu Brewery, uses Shizuoka-native yeast to craft this lively expression.
