Polished to 78%, this shiboritate namazake is pressed directly from the tank and bottled without filtration or pasteurization, preserving the wild, carbonated freshness of the moromi at its most unprocessed. Aromas of pear and melon precede a lively, gassy mouthfeel with a fruity, lactic sweetness and a clean, refreshing finish. Brewed with the soft Shiragiku spring water of Fushimi, it represents one of the most immediate and unmediated sake expressions in the Shinsei lineup.
