Yamada Nishiki polished to 40% is fermented for approximately 30 days at low temperature in this daiginjo from the Bingo region of Hiroshima. The sake won a gold medal at the National New Sake Competition in 2003, reflecting the precision of long, cold fermentation using the brewery's combination of soft well water and mid-hard groundwater.

Founded in the middle of the Edo period in the first year of Kyoho (1716). The theme is "Sake is the best gift gifts given by the natural environment in Japan", so we are actively working on the preparation that expresses the climate and climate of the warehouse.
