Shinrai is produced by Miwashuzou, a brewery founded in 1716 in the Shinishi district of Hiroshima Prefecture, whose name was inspired by a lightning strike that left the brewery unharmed and the belief that gods dwell in the Shinishi highlands. The brewery aims for sake with rich rice flavor and a refreshing, clean quality, achieved through traditional soft-water brewing methods and well-developed koji on rice sourced from Hiroshima Prefecture. In 2018 Miwashuzou revived kimoto brewing, reinforcing its commitment to traditional fermentation alongside a lineup built almost entirely on junmai expressions.
