Banshuu Umasake (晩秋旨酒), meaning delicious late autumn sake, is a muroka namazake Junmai Ginjo from Chiyoshuzou in Nara, using Omachi at 60% polishing. Released in late autumn as an unfiltered, unpasteurized seasonal expression, this Shinomine expression captures the rich depth of Omachi after summer rest, drawn from the Katsuragi mountain spring.
