Yamada Nishiki polished to 45% forms the base of this daiginjo from the Ogonbayashi premium label of the Ibaraki brewery. With over 13 gold prizes at the National New Sake Competition since 1998, the brewery's daiginjo production reflects an elegant, structured style developed through long-term low-temperature fermentation.
