This Osakazuki daiginjo from Makino Shuzo in Gunma has been aged over several years as a hizokazake (undisclosed cellar reserve), allowing the sake to develop a mellow, matured depth not found in standard releases. Extended aging rounds off the sharp ginjo peaks and introduces a honey-like richness alongside the original fruity aromatics, producing a complex, sophisticated sipping sake. A rare find reflecting the hidden cellaring tradition practiced at this brewery since its founding in 1690.
