
Description
Brewed as a honjozo with a 65% polish, this nama-chozoshu from Okunomatsu in Fukushima is stored unpasteurized and only heat-treated once before bottling, preserving a fresh, lively character. Adatara Mountain springwater, aged approximately 40 years underground, is used throughout the brewing process.
