Okunomatsu Daiginjo is polished to 50% from a brewery in Nihonmatsu, Fukushima Prefecture that has won 10 consecutive gold awards at the National New Sake Competition. The brewery uses the spring water of Mt. Adatara, aged 40 years in the mountain aquifer, for its clean, refined character.
