Okuharima Junmai Ginjo Yamadanishiki uses 100% Hyogo-grown Yamada Nishiki polished to 55% from Shimomura Shuzoten in the forested mountains of Himeji, Hyogo. Since launching the Okuharima brand in 1993, this 1884-founded brewery has committed to exclusively Hyogo Prefecture Yamada Nishiki, fully handcrafted in batches of maximum 1 ton for intense, umami-rich junmai ginjo character.
