Brewed using the yamahai method and bottled as an unpasteurized genshu, this sake offers a spiced, tropical character with notes of curried spice, caramelized onion and a hint of mango and banana. Wild fermentation lends an earthy, savory depth balanced by sharp acidity, while the undiluted style keeps the texture full and chewy. Bright acidity and minerality come forward when paired with food.
