Okuharima Junmai Ginjo Hyogo Nishiki uses Hyogo Nishiki polished to 55% from Shimomura Shuzoten in the forested mountains of Himeji, Hyogo. Founded in 1884 with a strict policy of 100% Hyogo Prefecture rice, this small-batch handcrafted brewery uses Hyogo Nishiki, a regional sake rice variety, to add another dimension to the Okuharima lineup's exploration of local terroir.
