Locally grown Yamada Nishiki polished to 40% is carefully fermented at low temperature and pressed slowly in a traditional fune press at this Mimasaka brewery, which has received three consecutive top awards at the Hiroshima Regional Tax Bureau sake competition. The daiginjo carries a fruity aroma and a smooth, mellow character with a slightly dry finish.

It is a small liquor store that has been founded in the Ohara area of Mimasaka City, Okayama Prefecture, which is near the prefectural border of Okayama, Tottori and Hyogo in the Chugoku Mountains, and has been working on a carefully hand -made and carefully sake brewing. Now, a squeezed machine called a rare tank (fune) is lined up with a bass bag packed with moromi and squeezed slowly.
