Hattan Nishiki at 65% polishing produces this junmai from the southernmost brewery in Hiroshima Prefecture, where granite-filtered spring water from three valley sources gives the sake its clean, moderately dry character. Sake meter value is +4 and acidity is balanced for a crisp finish that sharpens further when the sake is served warm.
