Mitaniharu
Hayashi Shuzo, founded in 1806 on Kurahashi Island in Kure City, Hiroshima Prefecture, brews Mitaniharu using water that filters through volcanic soil and flows from three valleys on the island, a characteristic the brewery name celebrates. The label's calligraphy was created in the Meiji era by the eldest son of Confucian scholar Rai Sanyo, and those original characters remain on every bottle today. The brewery hand-labels each bottle only upon receiving an order, reflecting a philosophy of care that extends from the cellar to the consumer.
