Michisakari Hiyaoroshi Yujo is an autumn seasonal release from Michisakari Co., Ltd. in Tajimi, Gifu—a brewery with roots in the Ansei era renowned for its dry sake. Hiyaoroshi is pasteurized once in spring, then matured through summer and released in autumn without a second heating, yielding a mellow, rounded junmai daiginjo with added depth and smoothness.

Michizakura is located in Nakatsugawa City, Gifu Prefecture. In this area, in Meiji 10, Shoya's fourth -generation Sennisuke Yamada started the sake brewing industry. The brand name "Sanzo Sakura" is derived from the name of this Sannosuke. The watering water uses Shimizu that springs out of its own mountains. In order to protect the water, we do not cut trees, do not plant forests, and maintain a mountain of water source as a total natural forest. I'm thinking of doing what I can for my convincing sake brewing.
