Mansakunohana Junmai Daiginjo Kameju is a prestige junmai daiginjo from Hinomaru Jozo in Yokote, Akita, crafted with Akita's prized Kame-no-o heirloom rice, a variety nearly extinct before its revival in the 1980s that is notoriously difficult to cultivate and brew. Known for producing sake with distinctive complexity and firm, layered acidity, Kame-no-o contributes a rich, slightly wild character that sets this expression apart from standard daiginjo. The Kameju label reflects the brewery's deep engagement with Akita's diverse sake rice heritage.
