Seiryu (青龍) Junmai Daiginjo Nama Nigorizake is a lightly cloudy, unpasteurized daiginjo from Nishiyama Shuzojo in Tanba, Hyogo, using Gohyakumangoku polished to 50%. Named for the Blue Dragon, one of the four sacred Chinese constellation guardians, this cloudy namazake from the 1849-founded brewery combines daiginjo-grade refinement with the fresh, creamy texture of suspended rice.
