Kotsuzumi Kotenraku (古典楽) Daiginjo uses Yamada Nishiki polished to 45% from Nishiyama Shuzojo in Tanba, Hyogo. Named for classical music, this expression from the 1849-founded brewery channels the artistic vision that poet Kyoshi Takahama saw when naming this brand, achieving refined aromatic depth with Tanba-grown Yamada Nishiki and ultra-soft Chinjutenzen well water.
