Kotsuzumi Hitenraku (飛天楽), meaning celestial music, is a Daiginjo from Nishiyama Shuzojo in Tanba, Hyogo, using Yamada Nishiki polished to 40%. This elevated expression from the 1849-founded brewery , its name given by haiku master Kyoshi Takahama , achieves exceptional aromatic refinement with Tanba-grown Yamada Nishiki and the brewery's ultra-soft Chinjutenzen well water.
