Koshinobairi (越乃梅里) Gohyakumangoku Junmai Daiginjo uses Gohyakumangoku polished to 50% from DHC Shuzo in Kita-ku, Niigata City. The Koshinobairi label, established in 1983, is the brewery's award-winning full-bodied expression using locally grown Niigata rice , semi-automated but with human decision-making at every critical step.
