Description
Yamada Nishiki is used for the koji rice while Yume no Kaori, a Fukushima-bred variety grown locally in Minami-Aizu, makes up the kake rice, both polished to 60%. The sake is dry with an SMV of +2 and a moderate acidity; warming brings out the rice-driven umami further.
