Aged three years using the yamahai method, this junmai develops a heady, mature aroma and a deep, round flavor best experienced served warm, since chilling mutes its character. Warmth brings out notes of shortbread, brown butter, roasted pumpkin and savory mushroom alongside a broth like umami depth. The yamahai fermentation contributes complexity and balancing acidity, while clean mountain water and extended aging add texture and layered richness.
