Yamada Nishiki is used for this daiginjo from Shukuhou Shuzo in Wakayama Prefecture, a brewery that has won Gold Prizes at the National New Sake Awards in 1993, 1994, and 1998. Kishukai draws on the soft subterranean water of the Kinokawa River system.
