Description
Kimotojikomi Furei from Umetsu Shuzo applies the traditional kimoto brewing method to the brewery's flagship Furei label. The Tottori brewery, established in 1865, uses Daisen mountain water and kimoto fermentation to build a sake with structured acidity and warmth-friendly depth.

The heart of the sake brewing, which has been handed down since its foundation, is a stubborn commitment unique to a small warehouse, with all the journey and effort. From the preparation in 2005, all sake was changed to rice and rice koji only.
With the pride as a crowned sake, and being involved in local agriculture in the future, the desire to "aim for a powerful pure rice sake brewing" is deepening.
