Umaigana Jukusei Daikoshu is a long-aged expression from Umetsu Shuzo, fitting the brewery's philosophy that pure rice sake deepens in character with time. The Tottori brewery, established in 1865, produces exclusively rice-and-koji sake, with all products pressed through traditional fune equipment.

The heart of the sake brewing, which has been handed down since its foundation, is a stubborn commitment unique to a small warehouse, with all the journey and effort. From the preparation in 2005, all sake was changed to rice and rice koji only.
With the pride as a crowned sake, and being involved in local agriculture in the future, the desire to "aim for a powerful pure rice sake brewing" is deepening.
