Produced via the traditional kimoto method at Sawanotsuru's Nada facility, this honjozo is fermented using naturally occurring lactic acid bacteria and wild yeast, requiring considerable time and labor. The result carries the classic Nada character: firm backbone, rich umami, and a crisp, clean finish.
