Daiginjo brewed with Yamada Nishiki polished to 38%, collected via tobin (18-liter ceramic flask) drip-press and bottled unfiltered. Tobin-drip collection captures the finest, clearest drops from fermentation; muroka means no charcoal filtration was applied, preserving the natural aromatic complexity of the sake.
