Ginjo brewed in the dry style at Shimizu Shuzo in Kanagawa, with rice polished to 60%. Founded in 1751, the brewery has won consecutive Monde Selection gold awards and employs low-temperature fermentation with their signature ultra-soft well water to produce clean, crisp ginjo sake.
