Kazenoshizuku Tokubetsu Junmai Kanakeshiborinakatorinama from Iiyama Shuzo in Nagano is a raw (nama) tokubetsu junmai showcasing the center-cut nakadori fraction obtained through a traditional pressing method that uses a wooden pressing frame to extract sake carefully and gently. The nakadori fraction, drawn from the middle portion of the press, is regarded as the most balanced and refined cut, free from the roughness of the first run and the heaviness of the final press. Bottled unpasteurized and without dilution, this expression captures the vivid, fresh character of the ferment at its most harmonious.
