Wakamidori Juunen Dai Koshu is a 12-year aged sake from Iiyama Shuzo, belonging to the jukushu category of long-matured sake that develops amber color and concentrated umami over time. Extended aging in the cold mountain environment of northern Nagano transforms the fresh flavors of the original sake into a deep, layered complexity with notes of dried fruit, nuts, and caramel. The mellow, contemplative character of this aged expression stands apart from the brewery's fresh seasonal releases.
