Wakamidori Okarakuchi, meaning extra dry, is Iiyama Shuzo's most assertively dry expression under the Wakamidori label, brewed to achieve a high nihonshudo sake meter value and minimal residual sweetness. The pronounced dryness is accentuated by the clean, cold mountain water of northern Nagano, which produces a lean, sharp finish. This style is favored by drinkers who prefer sake with an uncompromising, bracing dryness that cuts through rich food.
