This limited-release junmai ginjo from Kawatsuru features a gentei kojikomi process, meaning the proportion of rice used for koji is specially adjusted to enhance enzymatic activity and flavor depth. Bottled as a muroka (unfiltered) namagenshu, it is unpasteurized and undiluted, preserving the raw, vibrant character straight from the tank.
