Yamada Nishiki polished to 50% forms the basis of this junmai daiginjo from Kochi's Suisenshuzou. Kochi's warm Pacific climate and its long tradition of dry, food-friendly sake provide context for this pure rice daiginjo, which combines Yamada Nishiki's inherent quality with the clean profiles of the Tosa brewing tradition.
