Yamada Nishiki polished to 45% forms the basis of this junmai daiginjo from Osaka's Suminoe Shuzo, a brewery with Edo-period origins. Fruity, elegant, and rich with a sharp finish, it reflects the kura's hand-crafted approach and use of Izumi mountain underground water.
