A tokubetsu junmai under the Kanae label from Shinshu Meijo, brewed with Wadatoge obsidian water, one of Japan's most mineral-sparse soft waters. Kanae tokubetsu junmai characteristically shows a fruity apple-and-pear sweetness with rich umami, sold only through a select group of specialty sake retailers nationwide.
