Omachi is Japan's oldest sake rice, first documented in 1859 and the dominant premium variety before Yamadanishiki rose to prominence in the 1920s; it remains the only major sake rice variety that has never been crossbred. Aoki Shuzo's use of this heirloom grain in a Tokubetsu Junmai reflects its heritage character, typically delivering a full-bodied, earthy depth that contrasts with the cleaner profiles of modern varieties and sits within the Kakurei brand's ongoing exploration of rice diversity.

Aoki Sake Brewery's sake, which is represented by "crane -age", is created by the various grace of the snowy country and the traditional technique of Echigo Mori. Among the Niigata sake, which has many "Tanrei dry", we will aim to make the sake brewing of "Tanrei -kuchi", which leaves the original taste of sake rice, and inherits the taste for the next 100 years.
