Kakurei Junmai Ginjo from Aoki Shuzo is brewed at the historic Uonuma brewery founded in 1717, drawing on the region's soft snowmelt water and the skill of the Echigo-Toji guild. The sake offers aromas of baked apple alongside a light, silky texture and a mellow, round umami that reflects the brewery's commitment to tanrei-umakuchi over the straightforward dryness common among Niigata peers.

Aoki Sake Brewery's sake, which is represented by "crane -age", is created by the various grace of the snowy country and the traditional technique of Echigo Mori.
