Juuku Riccio Junmai uses Yamada Nishiki polished to 65%, brewed at one of Japan's smallest sake operations in Nagano's Shinshu Shinmachi. The name Riccio (Italian for hedgehog) reflects the brewery's quirky label concept; the sake shows a balance of gentle sweetness with a slight pleasant bitterness on the finish.
