Poco a Poco, Italian for 'little by little', is a junmai daiginjo polished to 45% using Hitogokochi rice and M310 yeast, a strain known for generating abundant ginjo aromatics. The aroma shows fresh muscat and melon character, with sweet tropical fruit and citrus notes unfolding softly on the palate.
