Tokubetsu Junmai made from Kinmon Nishiki rice polished to 60% at Yukawa Shuzo in the Kiso region of Nagano, founded in 1650. Kinmon Nishiki, a Nagano-origin rice variety, is expressed here with crisp acidity and a citrus-edged juiciness underpinned by clean Kiso River water.
