Junmai Ginjo made with Hito Gokochi rice polished to 55%, bottled as an unfiltered, undiluted namazake (muroka namagenshu) at Yukawa Shuzo in the Kiso highlands of Nagano. Direct bottle-filling straight from the press captures maximum freshness, with a honey-apple character and round, apple-ester ginjo aroma in a jouncy, lively texture.
