Junmai Ginjo kimoto brewed with Aiyama rice polished to 55% at Yukawa Shuzo in the Kiso highlands of Nagano, one of Japan's highest-elevation breweries at approximately 936 meters. Aiyama rice contributes a juicy, concentrated sweetness, while the kimoto method adds a bright, characteristic acidity.

愛山の真っ直ぐな甘さを、生酛由来の酸でキリッと締める。生酛仕込みをこんな風に活かしてもいいんじゃないかな。と、杜氏のひと声から醸された1本です。「愛山×生酛×火入れ×9号酵母」のスペックは愛山13と同じなのですが、アプローチを変えることでまったくちがう表情に仕上がっています。さらに長期熟成を経ることで奥深さを求めたく、現在2019BYを低温熟成させてリリースのタイミングを見計らっています。Original text from the brewery, in Japanese.
