Jurakudai Daiginjo Maikosan is a daiginjo polished to 40% from Sasaki Shuzo in Kyoto, named in tribute to the maiko (apprentice geisha) of Kyoto's traditional entertainment quarters. Fushimi's soft brewing water and the brewery's Kyoto cultural heritage inform this refined daiginjo.
